A Sad, sad post.

What could possibly make this post sad?  I lost my professional camera (The link is a dramatic song with a cute pug to make my story more emotional),  I now I am stuck with my pocket camera that takes horrible pictures.  So far, I think the last time I took pictures was on Thursday.   Not sure where I put it down.  I only have three spots in the house where I leave my camera,  so I has to be around there somewhere!!!

Anyways.

Tonight I made Grilled Eggplant with Garlic, Lemon, and Oregano.  They tasted like burnt marshmallows.  I could not stop eating them,  it make me think of burning marshmallows.  I wonder if they would work between two graham crackers with chocolate??  Eggplant smores anyone?

Looks like I was by a foggy ocean... let's use our imagination...
So depressing.  I want my good camera back!

Grilled Eggplant Day 1

It was a cloudy, rainy afternoon,  and then it dawned on me,  I planned my whole dinner around the grill, and that was not going to happen.  Around 3pm we were hit by a thunderstorm with strong winds.  After that,  it just rained and rained.  I feel bad for those who have no rain,  they could have had some of this.  But then again,  I prayed for another cloudy day, and I guess God answered it.

Grilled Eggplant with Italian Flavors pp. 135
I had some baby eggplants left from a week ago,  so I grabbed those to use them up (or the ones that were still "good" to use).  They were so small, they fit in the palm of my hand.
I ran out of thyme (the herb), I had none that was fresh nor dry.  I did some research on what other herbs could taste like Thyme.  Sadly,  there really is no subsitute.
Thankfully I had a bottle of Italian herbs, so I dumped some into my pot of marinate.

Now, I had two options,  I could broil the eggplant OR use my George Forman grill that I got at a garage sale.   I chose the later.  It worked.  But I am pretty sure that the grill would have worked better.

Our cat, Nika,  could smell the chicken that I "grilled".  She does tricks for chicken, beef, and fish.  I wish I had a wider lens so that you all could see that she was standing for her treat. :D

Anyways, back to the eggplant...

It was very bitter.  I think it was because I used some old eggplant.  Even the kids did not like it.  It was worth the try.

Just a note
I have had one of those days,  you know, one of those days when you write you address wrong on important papers, it takes you forever to complete one errand, oh and then you realize you need to run out and get some stuff at the store or else you'll be in trouble.  Yeah, one of those days... for me.  So hopefully that will explain why what happened, happened.

Broiling Eggplant...
Turbo got to help me this time.  Eggplant is a nice tender vegetable,  tender enough for a 4 year old to cut with a butterknife.
Where did I make my mistake?  Well, after I thought I read the directions,  I thought it said to cut the eggplant into 1/4in slices, but it was 3/4 slices.  That would have helped greatly.    Also,  I forgot to put salt on the the eggplant when I broiled it.  Sigh.

Blech.  And my mistakes did not help.  We really do not like Eggplant.  It was worth a try.
